Basil Butter Pork and Tray Bake Veg
Mamma Italiano marinated pork sirloin steak baked in a bag with blushing sunflower seed and fresh sweet basil oven-baked sweet potato and zucchini. Recipe supplied by Daily Dish.
Ingredients (serves 2):
- 300 g Pork Sirloin Steaks
- 200 g Sweet Potato Chunks
- 2 Courgettes – cut into rounds
- 100 g Cherry Tomatoes
- 10 g Basil – chopped to serve
- 2 tbsp Sunflower Seeds
- 20 g Parmesan – grated
- 25 ml DD Mamma’s Marinade
- 20 g Butter (from your pantry)
- Salt and Pepper (from your pantry)
- Olive Oil (from your pantry)

- 600 g Pork Sirloin Steaks
- 400 g Sweet Potato Chunks
- 4 Courgettes – cut into rounds
- 200g Cherry Tomatoes
- 20g Basil – chopped to serve
- 4 tbsp Sunflower Seeds
- 40g Parmesan – grated
- 50ml DD Mamma’s Marinade
- 40g Butter (from your pantry)
- Salt and Pepper (from your pantry)
- Olive Oil (from your pantry)
Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Preheat your oven to 220°C
Washing Instruction
Wash your hands, courgette and cherry tomatoes well. Rinse your basil thoroughly and drain on paper towel.
Gino’s Tip
You’ve got a good piece of meat, so treat it well. Take the pork chops out of the refrigerator about 15 minutes before you plan to start cooking. Bringing the meat up to room temperature helps it cook more evenly throughout.
Step 1 – Mamma’s Pork
In a large mixing bowl, rub and toss your pork sirloin steaks with your DailyDish Mamma’s Marinade, salt and pepper. Place in a foil parcel and pop into the oven for 18-20 minutes. if your pork is still slightly underdone, close your foil parcel and continue baking for an additional 4-5 minutes.
Step 2 – Italian Basil Roast
While your pork is cooking, give your large mixing bowl a quick clean and toss your sweet potato chunks along with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and pop into the oven for 15 minutes. Toss your courgette rounds and cherry tomatoes in the same mixing bowl along with a drizzling of olive oil, salt, and pepper. After your sweet potato has cooked for 15 minutes, add your courgette and cherry tomatoes to your oven tray and roast for a further 15 minutes.
To serve
Just before your pork and vegetables are done, melt your butter in the microwave and add your chopped basil and sunflower seeds. Mix this butter through your vegetables and sprinkle over your grated parmesan. Divide your vegetables amongst your servings and top with your mamma’s pork. Enjoy!
